What's For Dinner?

One major advantage of having family live nearby is that we can get together for dinner parties!  We're hosting dinner tonight with Kiley & Matt and Brady & Lena (Wes and Jasey, we'll miss you guys). This afternoon I've been scouring the internet for some fresh, relatively healthy menu ideas. And I think we're gonna dust off the grill for the first time this spring!  Here's what's on the menu so far:

Rosemary Shrimp Skewers with Arugula-White Bean Salad.  I found this recipe in a fitness magazine of all places, and lately I've been craving seafood (must be the warmer weather?).  I'll probably serve it w/ grilled broccoli and "good" bread (my husband's favorite food...bread).  If you click on the link, you can see some other yummy/healthy grilling ideas - I love the grilled peaches w/ ice cream and the grilled banana and dark chocolate s'mores.



And for dessert, Profiteroles with Hot Chocolate Sauce.  I love profiteroles, which are pretty much a fancy name for cream puffs or popovers.  I think Kyle and I first had profiteroles while visiting San Sebastian, Spain (a loooong time ago), and we have loved them ever since. Maybe I'll fill them with vanilla bean gelato and top with chocolate sauce.  Yum.

The really funny thing is I was just sitting here thinking about how bizarre and non-dinner my dinner was. I had a really late lunch so once I was finally hungry, I wasn't that hungry. I had some vegetables that I had fed the kids for dinner, the rest of Micah's pear, a few whole grain crackers, a serving of peanuts, diet cherry coke, and chocolate chips. Probably could not be any different from the delicious meal you are having tonight :-)
