This is a yummy lower fat version of broccoli cheese soup! Not to mention it's super easy to make. From Cindy Rebarcak's cookbook Good For You.
Ingredients:
4 cups milk (whole is best, or 2%)
2 15-oz cans chicken broth
8 T cornstarch
1 t salt
freshly ground pepper
dash of nutmeg
dash hot pepper sauce
2 c cooked and chopped broccoli
2 c shredded cheddar cheese (sharp is best)
Directions:
Combine first eight ingredients in large saucepan. Cook and stir over medium heat until bubbly. Boil one minute. Add cheese and stir until melted, then add broccoli.
