Recipe: My Favorite Muffins

Morning Glory Muffins

¾ cup raisins (I use golden)
2 c flour
1 c sugar
¼ c sesame seeds (I substitute flax seeds)
2 t baking soda
2 t cinnamon
½ t salt
1/8 t nutmeg
2 c carrots, shredded
1 large green apple, shredded
1 c rolled oats
½ c sliced almonds
½ c coconut
3 eggs
2/3 c oil
2 t vanilla

In small bowl cover raisins with water and microwave 1 ½ minutes until soft; drain.

Combine all dry ingredients in large bowl. Add remaining ingredients and mix well with spoon. Fill paper lined muffin cups level to top. Bake at 350 for 20-25 minutes, or until lightly browned. Cool on wire rack. Makes 22-24 muffins.

Note: The carrots and apple can be quickly graded in food processor. Also, I sometimes sprinkle the top with granulated sugar before baking.

  1. MMmmm!! Sounds yummy - do you have any pictures of the end result?!? A muffin is a muffin, but pictures are so great!
